Scott Jessee - Agriculture Save Money - Soil Test Soil testing is one of our most important agronomic tools for determining crop nutrient needs. Soil testing evaluates the fertility of the soil to determine the basic amounts of lime and fertilizer to apply. On most live- stock farms in Southwest Virgin- ia, no management practice will have more long term effects on production (both milk and meat) than a good soil fertility pro- gram. Home Gardening Soil testing is a valuable tool of the home gardener. Whether a 100 acre field or a backyard garden, analyzing the soil can help us provide plants the opti- mum amounts of nutrients for growth, save money, and protect • the environment. Fertilizer re- commendations for gardens are adjusted from pounds per acre to pounds per 100 square feet. By adjusting the rate, it is very easy to accurately supply the nut- rients needed for fruits and vegetables. Before spending money on lime and fertilizer, take a soil test to accurately diagnose the nutrient needs of your soils. For soil test kits or help interpreting soil test results, please contact the Extension Office (889-8056). • Listed below are some tips for taking a 'good' soil sample: • Stay away from areas close to farm roads • Avoid animal feeding areas used during winter • Sample to a depth of 4 inches for pastures and mea- dows. • For conventionally till- ed (plowed) row crops, sample to the depth of the plow layer • Use a clean, plastic bucket to collect samples • Take soil from 8 to 10 different areas in the field or garden • Mix soil together and fill the soil sample box. Donna Meade - Family and Consumer Science Tips to Reduce Your Risk of Salmonella from Eggs Eggs are one of nature's most nutritious and economical foods. A bacterium, Salmonella Enteritidis, can be on both the outside and inside of eggs that appear to be normal, and if the eggs are eaten raw or under- cooked, the bacterium can cause illness. Here are some things that you can do to reduce the risk of getting Salmonella Enteritidis from eggs? Eggs, like meal poultry, milk, and other foods, are safe when handled properly. Shell eggs are safest when stored in the refrigerator, individually and thoroughly cooked, and prompt- ly consumed. The larger the number of Salmonella present in the egg, the more likely it is to cause illness. Keeping eggs adequately refrigerated prevents any Salmonella present in the eggs from growing to higher numbers, so eggs should be kept refrigerated until they are used. Cooking reduces the number of bacteria present in an egg; however, an egg with a runny (#/Acre). Applying phosphate to soils capable of increased pro- duction (with low nutrient levels) encourages the growth of white clover. Clover will stim- ulate grass production (with the nitrogen it produces) and it will also improve the intake and dig- estibility of the forage mixture. Hay and row crop fields need to be tested annually. To get the most benefit for your fertilizer dollar, use the soil test report recommendation to make a customized fertilizer' application. All commercial fertilizer dealers have the capability of mixing fertilizer to meet the specific needs of your soils. Many times our familiar blends (10-10-10 and 19-19-19) don't always match up to the nutrients levels that need to be supplied for optimum crop growth. By soil testing and blending fertilizer, we can adjust the levels of nutrients for •maximize crop yolk still poses a greater ri than a completely cooked egg Undercooked egg whites an yolks have been associated Mih outbreaks of Salmonella Em-r- itidis infections. Both should-,be consumed promptly and nofWo kept warm or at room ternr ature for more than 2 hours. • - What are the specific actis I can take to reduce my risk a Salmonella Enteritidis infecffoia? 1. Keep eggs refrigefatgd at _<45 ° F (_<7 ° C) at all tin.s. 2. Discard cracked : or dirty eggs. -: 3. Wash hands, cooag utensils, and food prepara- tion surfaces with soap and water after contact with raw eggs. 4. Eggs should be cooked until both the white and the yolk are firm and eaten promptly after cooking, i- 5. Do not keep eggs wprm or at room temperature :for more than 2 hours. 6. Refrigerate unused; or leftover egg-containing foods promptly. 7. Avoid eating raw eggs. 8. Avoid restaurant dishes made with raw or under- cooked, unpasteurized eggs. Restaurants should use past- eurized eggs in any recipe (such as Hollandaise sauce 0r Caesar salad dressing) that calls for raw eggs. 9. Consumption of raw or undercooked eggs should be avoided, especially by yo/ing children, elderly persons, and persons with weakened im- mune systems or debilitafifig illness. Who is most at risk-fOr getting Salmonella Enteritidis? ' The elderly, infants, and those with impaired immnne systems may have a more severe illness. In these patients, the infection may spread from .the intestines to the blood stream, and then to other body sites and can cause death unless th person is 'treated promptly with antibiotics. How do I know if I have Samonella Enteritidis? . ' A person infected with the Salmonella Enteritidis bacterium usually has fever, abdomib,l cramps, and diarrhea beginn'ing 12 to 72 hours after consuming'a contaminated food or beverage• The illness usually lasts 4 to',7 days, and most persons recover without antibiotic treatment. However, the diarrhea can be severe, and the person may be gl enough to require hospitati, zation.
